Huevos Rancheros: It’s Whats for Breakfast

This was my first time making Huevos Rancheros. It’s was my attempt at a healthy, easy and quick breakfast-in-bed-for-my-man recipe. That turned out to be quite tasty!

Shopping List/ What You’ll Need
(Many, if not every, item in our pantry/fridge is organic, cruelty free, and farm raised. Gluten-free will be noted with: GF)

  • Dairy/ Poultry
  • 4 Eggs
  • 4 Cheese Mexican Cheese
  • Sour Cream or La Creama
  • Pantry
  • 1 Can of Black Beans
  • Fresh Produce
  • 1 Avocado
  • Bundle of Cilantro
  • 1 Tomato
  • 1 Onion
  • 1 Jalepeno
  • Other
  • 1 pack of Fresh Tortillas
  • Spices
  • Cayenne Pepper
  • Chili Powder
  • Paprika
  • Sea Salt
  • Pepper

Empty can of beans into a saucepan, add a dash of every spice above, cook until softened and mash with a fork.

Add butter to a medium size frying fan to cook eggs over medium (I love the yoke!)

In a cast iron skillet (or any frying fan) toast your tortillas. Or if you’re like me, just throw them on the open flame of your gas burner, yummers!

Layer the mashed black beans, the over medium egg, then sprinkle with cheese, add chopped onion, tomato, jalepeno, and cilantro on top with a dollop of sour cream or a drizzle of la crema.  Granish with sliced avocado. And viola!
