I had a killer craving for pasta last night. I wanted it alllll. Fresh homemade pasta in a buttery cheesy sauce with all the fixings. mmm mmm mmmmmm
But as Pinterest always does, it swayed my craving, not to something else but to something a little healthier. I took the challenge to create a healthy version of one of my all time favorite pasta sauces. And that within itself was a risk since this little mama-to-be wanted a very specific flavor on her tongue.
May I introduce to you the delicious – make my Italian husband want seconds – Spaghetti Squash Carbonara Recipe:
2 teaspoons salt (although I didn’t use any salt because the parmesan and bacon had plenty)
1 1/4 teaspoons fresh cracked black pepper (or to taste)
1 large spaghetti squash (about 2 pounds), halved and seeded (go organic)
4 slices bacon, cut into small strips crosswise ( I used uncured, no nitrates or fillers bacon from Trader Joes)
2 teaspoons minced garlic
1/4 cup chicken broth (go organic)
2 egg yolks plus 1 whole egg (go organic)
1 cup freshly grated Parmesan cheese (go organic)
2 chicken breasts (go organic)
Preheat the oven to 375 degrees F.
Prick the squash all over with a fork.
Roast on a foil lined pan 1 to 1 1/2 hours.
Let cool a bit.
Slice in half lengthwise, scoop out seeds and shred the squash with a fork.
Transfer to a large bowl.
Season chicken breasts with salt and pepper and pan fry over medium high heat (2 mins each side) and finish in the oven. (about 10 mins)
In a large saute pan, over medium heat, cook the bacon until it becomes crispy.
Add the garlic.
Saute for 1 minute.
Add the broth and cook until the liquid has completely evaporated.
In a medium bowl, whisk the eggs together with the cheese.
Season with the remaining salt and pepper.
Remove chicken from oven, dice into small pieces.
Combine the eggs with the bacon mixture, warming the eggs in the pan. (Do not let the eggs scramble. They will thoroughly cook – I promise.)
Add the spaghetti squash and chicken breast and toss to thoroughly combine and until squash is heated through.
Adjust seasoning, if necessary and serve/eat/devour immediately aka NOWWWW! Hehe
