Cauliflower Mash that Actually Taste Like Mashed Potatoes

I’m the kind of person who likes a challenge. So when I first heard about Cauliflower Mash, I wanted to challenge the recipe and prove that it was not good. I failed. And let me tell ya, I’m a BIG fan of potatoes and any recipe that derives from them. Team Potatoes all the way. But for as for mashed potatoes, I’m totally Team Cauliflower now.

This recipe is so dang easy.

Ingredients

1 Head of Cauliflower

1 Tablespoon of Grass Fed Butter

1/2 Cup of Fage Greek Yogurt

Sea Salt and Pepper to taste

Half a clove of Garlic or to taste

Directions:

Boil Cauliflower
Boil Cauliflower in salt and pepper water until tender
Once Softened Strain Well
Once Softened Strain Well

This step is very important the more water in the cauliflower the more watery your mash will be.

Transfer to Food Processor
Transfer to Food Processor add butter, dash of salt and pepper
Pulse
Pulse well
Check consistency
Check consistency and add Fage and garlic. Continue pulsing.
All done!
Taste test. Add more salt and pepper if needed. All done!

If there are lumps still in your cauliflower continue pulsing on low, feel free to add more butter or more Fage to make it extra creamy.
