I’m the kind of person who likes a challenge. So when I first heard about Cauliflower Mash, I wanted to challenge the recipe and prove that it was not good. I failed. And let me tell ya, I’m a BIG fan of potatoes and any recipe that derives from them. Team Potatoes all the way. But for as for mashed potatoes, I’m totally Team Cauliflower now.
This recipe is so dang easy.
1 Head of Cauliflower
1 Tablespoon of Grass Fed Butter
1/2 Cup of Fage Greek Yogurt
Sea Salt and Pepper to taste
Half a clove of Garlic or to taste
This step is very important the more water in the cauliflower the more watery your mash will be.
If there are lumps still in your cauliflower continue pulsing on low, feel free to add more butter or more Fage to make it extra creamy.
